The Mission
CoRFiLaC's consists in:

  • Developing research in order to place the historic Sicilian cheeses, Man and his values at the center of the rural world in order to strengthen the importance of tradition, biodiversity and respect of nature in a civilized society.
  • Observing the rural world, not only to satisfy the actual needs but also to "think ahead", in order to understand "tomorrow" and explore future needs, as it has already happened with "Aromatic indicators characterizing Ragusano cheese P.D.O.", "On-line nutrition and management", "On-line cultural traceability" and "Strategy to improve traditional niche products".
  • Offering job opportunities to many technicians and researchers selected for their expertise and allowing them to specialize in the best Italian and foreign Universities in order to guarantee a managerial class that is competent and qualified in the field and who are proud to be Sicilians.


    • The research strategy

      The research strategy is to develop experimental protocols that study the specific quality of traditional production systems that are deeply rooted in the territory. It is through those natural processes that man, farmer, dairy producer must learn to rule in order to obtain excellent cheeses, which CoRFiLaC defines as "Author's cheeses".



      The challenge


      The real challenge is to demonstrate scientifically that traditional production systems are not only historic memories to look back on, but are also the best expression of nature agreeing with environment where man is the essential harmony element that guarantees the respect of biological cycles.

      Traditional products are not just food, but are also known to have healthy properties and are expressions of historic and cultural heritage of people that are handed down through generations.
